Okra is one of my favorite vegetables. There are many ways to cook it, such as boiled, pickled, sauteed, stir-fried and deep fried, or make soup with it. Most people doesn’t like the slime, but it has never been a problem for me. With this Garlic Stir-Fried Okra (蒜炒秋葵) recipe, you have choices to avoid the slime if you really can’t take it. 🙂 Although I highly recommend the blanch the okra as is without trimming the stem, you definitely can do other way around to make sure it’s not slimy by trimming the stem or cut into pieces before blanch.

This recipe of Garlic Stir-Fried Okra (蒜炒秋葵) can be used for cooking any leafy greens, such as spinach, bok choy or chrysanthemum greens.
Tips:
1. Blanch okra before trimming the stem or cut it into smaller pieces to maximize nutrition.
2. If the okra is not overgrown, I’d like to cook it as a whole without any cuts. I love the juice it carries which makes it different from other vegetables!
Sauces I used:
Oyster sauce Toasted sesame oil
用料
12盎司 秋葵
1小勺 盐
1小勺 芝麻油
1大勺 蚝油
6瓣 蒜(切末)
2大勺 橄榄油
做法
- 锅中加水烧开,放入洗净的秋葵和1/2小勺盐焯一下,约1-2分钟。
- 沥干水分,待凉,切掉头部备用。
- 锅烧热后加入2大勺橄榄油,放入切好的蒜末爆香。
- 加入秋葵,半小勺盐,1大勺蚝油,快速翻炒约1分钟。
- 淋上1小勺芝麻油,翻炒约30秒。
- 关火出盘!
Garlic Stir-Fried Okra (蒜炒秋葵)
Ingredients
- 2 tbsp olive oil
- 6 clove garlic (finely minced)
- 12 oz okra
- 1 tsp salt
- 1 tbsp flavored oyster sauce
- 1 tsp roasted sesame oil
Instructions
- Bring water to a boil in a pan, and then add 1/2 teaspoon salt and okra to the pan. Let it boil for 1-2 mins and take the okra out and drain it.
- While we wait for okra to cool down, prepare some fresh minced garlic. Then cut off the head of each okra and chop them into half-length pieces.
- Heat up 2 tablespoons olive oil in a small pan over medium-high heat for 1 min or until it starts to smoke. Add finely minced garlic, stir and cook until fragrant. Put okra into the pan, mix with the garlic and stir.
- Add 1/2 teaspoon salt and 1 tablespoon flavored oyster sauce, mix evenly, and stir fry for 2-3 mins.
- Add 1 teaspoon of roasted sesame oil and stir for 30 seconds.;
- Turn off the heat and transfer it to the plate. Serve!
