Hot and Sour Bok Choy (酸辣白菜)
Ingredients
- 1 pound bok choy or Chinese cabbage
- 2 tablespoons black vinegar
- 2 teaspoons soy sauce
- 2 teaspoons roasted sesame oil
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 2 teaspoon oyster sauce
- 3 dry red chilis
- 1 tablespoon chopped green onions
- 1 tablespoon minced garlic
- 1 teaspoon minced fresh ginger
- 2 tablespoons vegetable oil
Instructions
- Clean and trim bok choy. Discard the base of bok choy, separate the leaves and the stalks, cut the stalks into bite-size pieces.
- Heat up 2 tablespoon vegetable oil in a large pan for 1 min or until it is beginning to smoke.
- Add dry red chiles, finely minced garlic, green onions and ginger, stir and cook until fragrant.
- Put bok choy stalks into the pan, quickly add 1 tablespoon black vinegar and stir fry for 1 minute.
- Add bok choy leaves, 1/2 teaspoon salt, 1 tablespoon oyster sauce, 1 tablespoon soy sauce, 1 tablespoon black vinegar, 1 teaspoon sugar, stir fry for 1 minute.
- Add 1 teaspoon roasted sesame oil and stir for 30 seconds.
- Turn off heat and transfer it to the plate. Serve!
