Pineapple Fried Sweet and Sour Pork Loin (菠萝咕噜肉)
Ingredients
Basic Ingredients
- Half pound pork loin
- Half pineapple
- 1 teaspoon salt for soaking pineapple
- Half green pepper
- Half red pepper
- 1 zucchini optional
- 1 teaspoon garlic sliced
- 1 tablespoon green onion chopped
- 1 teaspoon ginger julienned
- vegetable oil
Ingredients for Marinade
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cooking wine
- 1 teaspoon garlic powder
- 4 tablespoons cornstarch
- 1 Egg
Ingredients for Sweet and sour sauce
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 teaspoon white vinegar
- 2 teaspoons light soy sauce
- 2 tablespoons ketchup
Instructions
- Cut pork loin into thin bite-size pieces and marinate for 30 minutes in the mixture of 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon cooking wine, 1 teaspoon garlic powder. Set aside.

- Cut the pineapple into bite-size pieces and put them in a bowl add water and 1 teaspoon salt. Make sure the water cover all the pineapple. Soak for 30 minutes.
- Cut the peppers and other vegetables you like into bite-size pieces.
- Crack an egg into the marinated pork after 30 minutes, mix well; Add 4 tablespoons cornstarch, mix and coat well. Make sure there is no egg or marinade dripping down from the pork.
- In a pot, pour in about 5 cm of vegetable oil that will allow you to deep-fry the pork. Over medium heat, bring the oil to 350°F. In batches of 6 to 8, place the pork pieces in.
- Deep-fry them for 2-3 minutes or until they’re slightly golden. Flip them halfway through. Using a skimmer, remove from oil and place them in a bowl until cool.
- Reheat the oil to 350°F. Place the fried pork into the pot and re-fry until they are completely golden brown and crispy.
- Using a skimmer, remove from the oil and place the pork on a plate lined with a paper towel.
- Make the sweet and sour sauce: mix 2 tablespoons ketchup, 1 tablespoon sugar, 1 teaspoon white vinegar, 1 teaspoon salt, 2 teaspoons light soy sauce.
- Heat up the pan with 1 tablespoon vegetable oil until it is just beginning to smoke (about 395°F), add green onions, garlic and ginger slice, and stir fry until them fragrant.
- Add peppers and other vegetables you like stirring fry for 1 minute.
- Add the pineapple chunks and pour in the sweet and sour sauce, quick stir fry until they turn clear.
- Return the deep-fried pork into the pan and stir-fry until all the pieces are coated with the sauce. Let it simmer for 1 minute and serve it hot!
