Sticky rice Steamed Ribs (糯米蒸排骨) is a delicious dish that takes a little bit of time. First, the time to marinate the ribs and sticky rice should be long enough; the longer the flavor infused more in the ribs, and the sticky rice can be softer. Second, the time for steam needs to be long enough to bring out the best taste. Normally, it takes 1.5-2 hours to steam it, while this Sticky Rice Steamed Ribs Instant Pot Recipe only needs 40-50 minutes and the flavor is also much better. Moreover, the corn starch should be added before starting to cook so that the sticky rice won’t come off the ribs. DO NOT ADD STARCH ONE NIGHT AHEAD!
Just in case you are curious, our pressure pot is Instant Pot Ultra 6 Qt 10-in-1 (programmable). My husband got this with a pretty good deal 2 years ago, but I think the price on Amazon now is quite close to that as time goes by.
糯米蒸排骨一道耐心成就的美食。第一,排骨的腌制时间和糯米浸泡时间要够长,时间越长排骨越香,糯米更软糯。第二,蒸的时间要够长,这样做出来的糯米蒸排骨才能更好入味,好吃不腻。另外,要使糯米粒与排骨很好的粘连,一定要在蒸排骨前再加淀粉到排骨中,不要提前一夜加!
用料
主料
500g 排骨 (最好切成4cm左右长)
1量杯 糯米
3大勺 玉米淀粉
若干 粽叶 (可选)
腌汁
1大勺 生抽
2小勺 老抽
1大勺 耗油
1大勺 料酒
1小勺 盐
1小勺 糖
3大勺 蒜末
3片 姜片
做法
- 这个版本的糯米蒸排骨不能焯水,所有需要把排骨放在放入冷水中浸泡清洗干净,中间可以换1-2次水。
- 在一个较大的容器中或厨房用的密封袋中放入所有腌汁所需材料,再放入洗净并沥干水分的排骨,盖上盖子或密封好袋子,摇晃几次,使排骨均匀沾满酱汁,放入冰箱冷藏过夜,约10个小时。
- 淘净1量杯糯米,放入一个干净的大碗,并倒入适量的水,确保水面高于糯米2cm左右,浸泡约10个小时。
- 从冰箱取出腌制好的排骨,将排骨从腌汁中取出放入另外一个大碗内,加入3大勺玉米淀粉,拌匀。
- 沥干糯米水分,将糯米倒入排骨中,拌匀,使排骨均匀裹上糯米。
- 取一个大小适中的盘子,盘底铺好粽叶,放上裹好糯米的排骨,再在上面用若干粽叶包裹,最好用线将粽叶绑起来。我是用3张粽叶一次包2块大排骨,分批摆放在盘子里的。如果没有粽叶,请在盘底抹一层油,防止糯米粘住底部。
- 在电压力锅中加入2-3量杯水(由自家的压力锅决定,不能少于最低所需最低水量),放入自带蒸架,将包好的排骨放入锅中,盖好盖子。
- 设定程序为Steam,高压,50分钟。完成后,等10分钟放气开盖,取出蒸好的排骨开始享用吧!
Sticky Rice Steamed Ribs Instant Pot Recipe
Ingredients
Basic Ingredients
- 1 pound ribs cut into 1.5-2 inches pieces
- 1 cup glutinous rice
- 3 tablespoons corn starch
- Several bamboo leaves optional
Ingredients for Marinade
- 1 tablespoon light soy sauce
- 2 teaspoons dark soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cooking wine
- 1 teaspoon salt
- 1 teaspoon sugar
- 3 tablespoons garlic minced
- 3 pieces ginger sliced
Instructions
- We don't blanch the ribs in this version sticky rice steamed ribs recipe. So we need to soak the ribs in the cold water for about half an hour before we marinate it. Change the water 1-2 times in between, you should see the blood come into the water.
- One night before cooking - Put all the ingredients for the marinade in a large container or zip bag, drain and dry the ribs, put the ribs in the container or zip bag, cover it or zip it, shake and make sure all the ribs are coated well. Put the ribs in the refrigerator for about 10 hours.
- One night before cooking - Put 1 cup glutinous rice in a large bowl, add enough water to cover all the rice, about 1 inch higher than the rice. Soak for 10 hours.
- (Optional) In a container, soak the bamboo leaves in the water overnight.
- Cooking day - Take out the ribs and discard the marinade, put the ribs in a large bowl, add 3 tablespoons corn starch and mix well.
- Drain the glutinous rice before use, put the rice in the large bowl, mix well and make sure all the ribs are coated with the rice.
- Dry the extra water from the bamboo leaves, and place half of them on a plate. Please make sure this plate fits into your instant pot. Place the ribs on the bamboo leaves, then use the other half leaves to cover it. It's better to use cotton strings to tie it. If not, you can put another plate on top. When I cooked this, I used 3 pieces of bamboo leaves to wrap 2 big pieces of ribs (equal to 4-5 pieces of baby ribs) and tie with cotton strings, then put 3-4 batches into the pot at one time. This step is optional, if you don't have bamboo leaves, you can apply a layer of cooking oil on the plate before you put the ribs on it, so that the rice won't be sticky with the plate.
- Add 2-3 cups water in the instant pot (it depends on your pressure cooker, just make sure meet the minimum level at least), place the trivet in the pot, put the plate on top of it and cover.
- Set the program at "Steam", Pressure on "High", 50 minutes. When it is done, use 10-minutes natural release, take out the ribs and place in a plate, add some chopped green onion for garnish. Enjoy!
Notes
- I used Instant Pot Ultra-60 to cook these Sticky rice steamed ribs! Please make sure to follow your cookware's instructions for usage. If you don't have a pressure cooker, you can just use other pans you have, just make sure to steam it for at least 1.5 hours!
- You don't have to use bamboo leaves, lotus leaves work too; if you don't have any leaves, simply apply a layer of oil on a plate, and then place the ribs on that plate to steam.
