Chinese Steamed Egg (蒸鸡蛋羹 Zheng1 Ji1 Dan4 Geng1) is like the comfort food when we were little. It’s very easy and quick to make. Every time I eat this, I will think of my mom, and you can eat it at any time!
If you don’t have the stock at hand, the simplest way to make this dish is using water to replace the stock. Today we have many other great choices, such as putting on some marinated meat pieces or shrimp on top while steaming. Some people like to add some black vinegar to spice it up! Your food, your way!
CHINESE STEAMED EGG (水蒸蛋)

Ingredients
- 4 eggs
- 1 cup chicken stock you can replace with water if you don't have stock.
- 1 tablespoon green onions chopped
- 1 tablespoon light soy sauce
- 1 tablespoon toasted sesame oil
- 1 teaspoon salt
Instructions
- Crack all the eggs into a mixing bowl, beat until well combined and foamy.

- Add 1 teaspoon salt and pour in the chicken stock, whisk until fully mixed. Please make sure the stock added doesn't exceed 2 times of the eggs liquid.
- Strain the egg mixture twice until there is no bubble.
- Pour the egg mixture into a shallow bowl and cover.
- Put the bowl with cover in a steamer, bring the water to a boil and continue to steam for 8-10 minutes on medium heat. Please do not put on high heat.
- Remove the bowl from the steamer, use the spoon to pour the soy sauce and toasted sesame oil evenly on it, sprinkle some chopped green onions. Enjoy!
